“Mine Bouille” (Noodles Broth)
Chinese
cuisine occupies an important place in the culinary tradition in Mauritius.
Many local specialties derive directly from recipes imported by Chinese
emigrants. Among the dishes from the Middle Kingdom of China, noodles are among
the most popular, both in the street-based (“baz mine”) and in the kitchen many
houses.
Sauces
such as soy and oyster sauce plays a major role in the noodle’s broth. The basic
dish normally called as boiled noodle (mine touni) in Mauritius, is prepared
with a dose of minimal ingredients. You can then add any topping you prefer from
the wide variety of choices given. Many propose meat, fish, crustaceans, mollusks,
mirror or boiled egg and others.
My
favorite is having the noodles broth with mangwak (mine bouille mangwak) a kind of
seashell available at the south of the island, Mahebourg.
