“Gato arouille” (Taro root fritters)
The Taro root is a
starchy root vegetable, originally grown in Asia but now enjoyed worldwide. It
has a brown outer layer and white flesh with purple splotches. When baked, the
flavor is slightly sweet and the texture is similar to that of potatoes.
These fritters are made
by grating the roots and fry them until they are crisp. It has a mildly sweet
and savory gingery flavor. It one of the
recipes from the Sino-Mauritian culture that everyone enjoys.
I like savoring those
little fritters with red chilies!
